Max and the gang really know how to go whole hog: head cheese, country pate, cabeza taquitos, carnitas tacos, pulled pork sandwich, duo of grilled loin and braised belly, tagliatelle and trotters, and chocolate and honey dipped pork belly. That last one’s a dessert.

I really want Pig Trotters and Pork Belly! Will there be any left on the menu Tuesday?
This pig is going fast…the belly will definitely be gone by tomorrow although we may have belly from a different pig. The trotters may sell out tonite or they may make it one more day…
