Building the Brewery

We love kombucha, you love kombucha. It takes Steph 6 weeks to make 5 gallons, and it takes us about 3 days to sell out. We looked at each other and said, “each other, it’s time to get the Linkery Brewing Company up and running. And make lots of kombucha.”

So today we went to Escondido to meet the friendly driver from Fruit Growers Supply, who brought us two MacroBins, which a lot of wineries use as fermenters. Friend of the Link Bobby, who has gone into business as North Park leading hauler of junk and other things (seriously), drove us.

We couldn’t get them square in the brewery room until Doctors Michael and Bobby performed surgery.

Once we got the bins in the brewery room, we finally had what we needed. A hot tub!

No, actually, Steph will be brewing the big K, 135 gallons at a time, starting next week. Expect to see it as a permanent fixture here by the end of March.

PS the other bin we figure for sauerkraut.

    does this mean you guys are thinking about starting brewing some beer too? That would be good, just a thought.

    I’ve seen the little brewroom setup and it looks great. If you guys are too busy to get in there and start brewing, I’ll be happy to use your accommodations!

    JOB - yep, we plan to brew some beer. Several folks in house are now brewing beer in 5 gallon batches (not for sale) and once we’re confident in it we’ll move it to the big system (and get licensed and all that). We think we’ve got the kombucha dialed in, that’s why we’re starting with that.

    James - thanks for the kind words…I think we have 3 breweries in house now, if any of them threaten to go unused I’ll let you know!
