This other person wrote the blog post I’ve been meaning to, about exactly how Taza chocolate is made, and why it’s so great, and why we switched to using only Taza chocolate for all our chocolate needs.
And it even has pictures of Linkery chocolate being made.
Raddest thing ever.

Jay, it is a pleasure to do your work - especially because I didn’t even realize it.
If I ever come to San Diego, you bet I’m parking myself in your kitchen and watching your pastry chef work. That’s some gorgeous chocolate.
