Kentucky Fried (Local Pastured) Buches

You may know about the famous and venerable Tijuana street stand, Kentucky Fried Buches.

If you don’t, you do now.

Anyway, since we started getting whole pastured chickens from Curtis, the folks in the kitchen knew I’ve been wanting to do something like this. And I do love me some buches.

So today, we have them as a bar snack. Kettle fried, over tortillas with a red pepper sauce.
