Really Pig Weekend

The grassfed Angus steer we brought in last weekend was, to say the least, a big hit. All the steaks were gone from it by the time we closed on Saturday nite. Curtis brought a bunch of chickens by Sunday, so we’ll be featuring them all week (fried chicken dinners on Wednesday!). But we thought we’d better keep the weekend ball rolling with something big.

Big, like a pig.

Actually this a young-ish pig, about 150 pounds, Berkshire breed, from the Hilleman Family Farm in State Center, Iowa. We’re cutting up the whole pig, from the cabeza to the trotters. We’ll have chops, pork belly, carnitas, head cheese, country pate and more.

I went and visited the farm a couple years ago, they were still rebuilding after being hit hard by a storm. The Hillemans and their farm are great, and we’re grateful we’re able to serve this pig!
