Red, White and Blue. And Lamb Riblets and Goat Head.

Max and crew were outdoing themselves today. Here’s some of their new stuff for tonite:

* Pastured goat’s head tamales, with goat from BN Ranch, which we visited a couple weeks ago.

* White turnip soup with house cured country ham and red chard

* Red turnip and Point Reyes blue cheese salad with pepitas and local wildflower honey

* Local pastured lamb riblets, bbq style. This is like a mini rack of lamb, seriously.

* Irish bacon dinner, with Butterball potatoes and carrots and whose made whole grain mustard. Irish bacon is basically a cured pork loin (the center part of a pork chop). It is a blast of tender deliciousness.
