Chop butter and flour into a grainy mass. Add water and work quickly into a dough.
Push the dough thinly into a pie mold with removable edge, about 28 cm in diameter. Chop and leave in freezer for about 15 minutes. Set oven to 200 °.
Bake the pie shell in the middle of the oven for 10–12 min. Break away the lower part of the asparagus. Cut the asparagus into thin slices, save the buds whole.
Grate the cheese. Add asparagus, pine nuts and cheese in the mold, place the asparagus buds on top. Mix eggs, cream, salt and pepper and pour into mold.
Bake in the middle of the oven for about 20 minutes. Serve with salad.
