Beetroot pie with Quinoa and Chevre Vegetarian Recipe

Ingredients

  • 230 g of fresh pie dough
  • 3 eggs
  • 2 dl oat drink
  • 0.5 tsp cayenne pepper
  • 2 dl boiled quinoa
  • 300 g cooked beetroot, in pieces
  • 2 green onions, shredded
  • 200 g chevre, broken into pieces

How to prepare

  • Press out the pie dough into a pie mold and notch with a fork. Set in the freezer for about 10 min.
  • Bake pie shell in the middle of the oven about 10 min.
  • Mix eggs, oatmeal, salt and cayenne pepper. Distribute quinoa, beets, green onions and chevre in pie form.
  • Pour over the egg mixture and bake in the middle of the oven for about 40 minutes.
