Broccoli Pasta with Roasted Hazelnuts Vegetarian Recipe

Ingredients

  • 400 g of pasta
  • 500 g broccoli
  • Pasta Sauce
  • 5 dl whipped cream
  • 100 g freshly made parmesan cheese
  • 1 lemon, finely grated shell (only the yellow)
  • salt and black pepper
    For serving
  • 2 dl hazelnuts
  • grated Parmesan
  • freshly ground black pepper

How to prepare

  • Roast the hazelnuts in a dry pan until the peel starts to loosen. Rub away the loose pieces of the shell by hugging the nuts in a kitchen towel.
  • Roughly chop them.
    Pasta sauce:
  • Boil the cream in a saucepan and reduce (cook together) until about half remains about 10 minutes. Add the parmesan and lemon zest.
  • Season with salt and pepper.
  • Cook the pasta as directed on the package. Cut broccoli into smaller pieces. Bring to the boil in the pasta water for the last 3 minutes.
  • Turn the pasta and broccoli into the sauce.
  • Top with parmesan and nuts and black pepper.
