1. Keep the kitchen clean

Keeping the kitchen clean is important to avoid spreading bad bacteria. Therefore, be sure to clean the knives and cutting boards carefully after cutting the chicken. Also, wash both your hands and your sink carefully. If you use a dishcloth to wipe away any juice that has dropped from the chicken, you should throw the cloth afterwards.

2. Cook the chicken properly

Make sure the chicken is properly cooked through. The temperature required to succeed is 70º C. When the chicken is done, the meat next to the legs should be completely white, not cut, red or bloody.

If you are going to save leftovers from your pre-cooked chicken, you need to cool them down immediately after they are steamed off. Big pieces should also be divided into smaller ones – then the cooling goes faster.
