The classic English fruitcake is a delicious cake full of goodies that taste best in thin slices. Enjoyed with one or two cups of black coffee. Cognac and fruit make the cake stay juicy for a long time.
Ingredients for fruitcake
- 5 dl of dried fruit, for example, apricots, figs, raisins, and cranberries.
- 1 cup of brandy
- ½ orange, grated peel, and squeezed juice
- 100 g walnuts
- 200 g butter
- 2 cups powdered sugar
- 4 eggs
- 3 1/2 dl wheat flour
- 1 teaspoon baking powder
- butter + breadcrumbs for the oven
How to prepare the dish
- Cut fruit such as figs and apricots into smaller pieces. Put all the fruit in a bowl and mix with brandy, peel, and add the juice from the orange.
- Cover and let stand for a few hours – preferably overnight.
- Set the oven to 175 degrees. Grease and add breadcrumbs in a shape that holds about 2 liters. Chop the walnuts roughly.
- Add butter and sugar porously so they turn white. Add the eggs one at a time while whisking. Mix flour and baking powder. Stir the fruits and nuts into the flour mixture. Then stir everything in the egg mixture. Pour the batter into the mold and bake at the bottom of the oven for about 1 hour. Try with a stick – when it is dry, the cake is ready. Allow the cake to cool before serving.
- The cake will only get better if it can rest for a few days. Cover with foil and store in the fridge.
