Healthy & Vegan Chocolate Chip Cookies Recipe

For those of you who also have toddlers, these cookies are the perfect way to get them to eat chickpeas. The recipe gives 9 crazy crazy healthy chocolate chip cookies.

Ingredients:

about 260 g of pre-cooked chickpeas (rounded weight)

1 pinch of genuine vanilla powder

1 dl peanut butter (almond butter also works)

2 tbsp agave syrup

1 teaspoon baking powder

1 pinch of salt

120 g coarsely chopped dark vegan chocolate

Do this:

Mix all the ingredients except the chocolate in a food processor to a smooth, thick batter.
Mix down the dark chocolate, saving 1/3 to garnish with.
Let the cookie dough rest in the refrigerator for at least 30 minutes before baking.
Set the oven to 175 degrees (upper and lower heat).
Click 9 pieces of cookies on a sheet of baking sheet paper. Garnish with more dark chocolate and bake the cookies in the middle of the oven for about 15 minutes.
Leave the cookies on the plate until they have cooled completely before serving. The cookies are soft just when they come out of the oven but get a cookie consistency as soon as they cool.
