How to Make Your Own Tomato Soup: Recipe

It is not to deny that the pre-cooked soup is simple and quick to prepare and that it does not burst your budget. Usually, you just need to add water or heat the soup in a saucepan – but what is the soup really made of? Although it tastes good, there are often large amounts of salt and sugar in it. If you make the soup yourself, you know exactly what’s in it – and you can still make it at a small cost.

Homemade soup is almost as simple as the read-made one. You only need canned onions, broths and tomatoes. Does that sound like something you already have in your pantry? Well, I thought so. Give up ready-made soups and look for the chef’s knife – you won’t regret it.

Ingredients for tomato soup

  • 0.5 dl chicken broth (preferably homemade)
  • 3 tablespoons butter
  • 1 tbsp basil oil (possibly Sunflower oil)
  • 1 finely chopped cloves
  • 1 finely chopped onion
  • 2 garlic cloves
  • 3 tablespoons tomato purée
  • 400 g chopped tomatoes
  • 400 g of tomato paste
  • 1 fist cherry tomatoes
  • About 8 dl water
  • ½-1 teaspoon thyme
  • ½-1 teaspoon oregano
  • ½-1 teaspoon sugar
  • Taste with salt and freshly ground black pepper

  • Boiled pasta
  • Croutons (preferably homemade)
  • Grated cheese (Manchego or pecorino tastes extra good)
  • Sour cream

How to prepare

Start by chopping onions and garlic. Pour oil and butter into pan and fry onion and garlic on low heat until shiny and fine. Then add the thyme and oregano and simmer a bit before adding the cherry tomatoes, tomato puree, chopped tomatoes and tomato paste. Rinse out the jars to get all the tomato. Now you can put in the chicken broth.

If you have no homemade broth, you can use purchased broth cubes that you dissolve in water. Let it all boil and season with sugar, pepper and salt. Slowly simmer the soup for 5-10 minutes.

Why should I have sugar in the soup?

Sugar helps to highlight the tomato flavor so you get a more balanced tomato soup. You can experiment with the amount of sugar or alternatively use canned tomatoes that are a little sweeter.

You can also make a “pre-mixed version” without mixing. Then you can have 400 g extra tomato paste instead of diced tomatoes and cherry tomatoes. When the soup is ready, you can pour it into a baking dish and place it on the table. Tear over the cheese and place pasta, croutons and crème fraîche on the table.
