Ingredients for 1 pie
- Dough
- 2 – 3 dl wheat flour
- 1 dl powdered sugar
- 1 cup coconut flakes (grated coconut)
- 150 g butter
- Filling
- 2 cups crème fraiche
- 2 eggs
- 1 vanilla bar (scraped seeds)
- 1 dl powdered sugar
- 1 lemon, finely grated peel and juice
- 500 g of pear
How to prepare
- 45 minutes
- Mix all dry ingredients into the pie dough.
- Melt the butter and pour over the dry ingredients. Mix into a crumbly dough.
- Press out the dough into a pie mold, about 24 inches in diameter. Set cold for 30 minutes.
- Mix the crème fraiche, eggs, scraped vanilla seeds and sugar into the filling.
- Tear the lemon zest finely and add to the batter, also squeeze out the juice and add it too. Whisk vigorously and pour the batter into the pie shell.
- Rinse and clean the pears and cut into 1 cent2 cm thin slices, place in a fine pattern at the top of the pie.
- Bake at 200 degrees in the middle of the oven for 40 minutes until the filling is completely still and the pears are getting some color.
