Pear Pie with Lemon Recipe

Ingredients for 1 pie

  • Dough
  • 2 – 3 dl wheat flour
  • 1 dl powdered sugar
  • 1 cup coconut flakes (grated coconut)
  • 150 g butter
  • Filling
  • 2 cups crème fraiche
  • 2 eggs
  • 1 vanilla bar (scraped seeds)
  • 1 dl powdered sugar
  • 1 lemon, finely grated peel and juice
  • 500 g of pear

How to prepare

  • 45 minutes
  • Mix all dry ingredients into the pie dough.
  • Melt the butter and pour over the dry ingredients. Mix into a crumbly dough.
  • Press out the dough into a pie mold, about 24 inches in diameter. Set cold for 30 minutes.
  • Mix the crème fraiche, eggs, scraped vanilla seeds and sugar into the filling.
  • Tear the lemon zest finely and add to the batter, also squeeze out the juice and add it too. Whisk vigorously and pour the batter into the pie shell.
  • Rinse and clean the pears and cut into 1 cent2 cm thin slices, place in a fine pattern at the top of the pie.
  • Bake at 200 degrees in the middle of the oven for 40 minutes until the filling is completely still and the pears are getting some color.
