Chocolate and Coconut Muffins Recipe

Ingredients 10 pieces

  • Chocolate and coconut muffins
  • 1 dl almond flour
  • 1/2 cup coconut flour
  • 1/2 cup cocoa
  • 2 tsp baking powder
  • 1 teaspoon vanilla powder
  • 3/4 dl of coconut oil
  • 2 eggs
  • 2 cups coconut milk
  • 1 dl sweet sprinkle or light sprinkle
  • chocolate frosting
  • 75 g dark chocolate, sugar-free
  • 3/4 dl whipped cream
  • 1 tbsp grated coconut

How to prepare

  • 45 minutes
  • Set the oven to 175 degrees.
  • Put paper molds in a muffin plate (if you do not have a muffin plate you can buy muffin molds made of slightly coarser paper for more charity). Mix almond flour, coconut flour, cocoa, baking powder and vanilla powder in a bowl.
  • Melt the coconut oil.
  • Whisk the eggs.
  • Whisk together the melted coconut oil, coconut milk and sweet sprinkles or light sprinkles in a bowl, whisk the mixture into the beaten eggs, whisk last in the dry ingredients. Divide the batter into the molds.
  • Bake in the middle of the oven for about 15 minutes. Take out the muffins, let them cool and make the glaze for so long.
  • Chop the chocolate and place it in a bowl.
  • Boil the cream and pour it over the chocolate, stir until the chocolate melts, allow to cool slightly.
  • Glaze the muffins and sprinkle with coconut.
