How to Make an Amazing Tropical Lunch Salad

For 2 people.


1 can of mixed beans, 230 g
100 g cherry tomatoes, halved
100 g mango, diced
1 avocado, 110 g, sliced
½ red pepper, shredded
50 g salad peas, halved
1 green onion, shredded
40 g of mixed salad
4 walnut halves


1 tablespoon apple balm vinegar
1 tbsp olive oil
salt and pepper
Garnish with: fresh thyme
Serve with: 2 pieces of sourdough bread of 30 g, ev. gluten-free bread

Do this

Put beans, tomatoes, mangoes, avocados, peppers, peas and green onions on a bed of lettuce leaves. Whisk together the dressing and roll it over. Top with walnut halves.
