How to Make Pumpkin Soup – Recipe

Ingredients 6 servings

  • Pumpkin:1⅕ kg
  • Yellow onions: 2
  • garlic cloves: 4
  • Butter: 1 tablespoon
  • Milk: 12 dl
  • vegetable broth: 4 dices
  • Crème fraiche: 4 dl
  • Lime, grated peel and juice: 2
  • Sambal oelek:2 tsp
  • Fresh coriander
  • 1 pot

How to prepare

  • Peel and cut the pump into cubes.
  • Peel and chop the onion.
  • Fry the onion in butter in a saucepan.
  • Add pumpkin, milk and broth cubes. Let the soup cook for about 10 minutes.
    Mix the soup and stir in half of the crème fraiche.
  • Season with lime, sambal oelek and possibly salt. Let the soup cook, serve with a click of crème fraiche and fresh coriander.
