Mexican Vegetarian Pie Recipe


  • 400 g Taco mex mix, Chopped & ready
  • 0.5 tablespoons ground cumin
  • 1 tsp chiliflakes
  • 1 tbsp neutral oil
  • 4 eggs
  • 1.5 dl milk
  • 1 dl cream
  • 150 g of grated cheese
  • 0.5 tsp salt
  • 3 dl wheat flour or 1.5 dl wheat flour and 1.5 dl graham flour
  • 125 g cold butter, diced
  • 2 tablespoons cold water
  • 0.5 tsp salt
    For serving:
  • 1 jar of tacos sauce
  • 70 g salad mix

How to prepare

  • Grate the butter in the flour with your fingertips or in a food processor to a crumbly mass. Add salt and water and quickly work together to form a dough. Press out the dough into a pie mold and leave in the freezer for about 10 minutes. Chop with a fork and bake in the middle of the oven for 10 min.
  • Mash vegetables with spices and salt in oil while stirring for about 3 min. Lightly whisk together eggs, milk, cream and salt. Distribute the vegetables in the pie shell and sprinkle with the cheese. Pour in the egg mixture and bake in the middle of the oven until the pie has solidified, about 25 min.
  • Serve with tacos sauce and a mixed salad.
