Omelet with Tomato Salsa Vegetarian Recipe


  • 300 g of potatoes in sticks
  • 1 tbsp olive oil
  • Omelette batter:
  • 6 eggs
  • 1 dl water
  • 150 g of grated cheese
  • 0.5 tsp black pepper
    0.5 tsp salt
  • Tomato salsa:
  • 3 diced tomatoes
  • 1 chopped shallots
  • 3 tablespoons ajvar relish
  • 1 teaspoon sambal oelek
  • 1 chopped coriander or parsley
  • 0.5 tsp salt

How to prepare

  • Fry the potatoes in olive oil for 3 minutes. Use a frying pan that can withstand oven heat, about 20 centimeters in diameter and preferably with a high edge.
  • Omelet batter
  • Whisk together the ingredients for the omelet batter and beat it over the potato.
    Set the frying pan in the oven until the omelet has stopped and has a nice color, about 15 minutes.
    Tomato Salsa
  • Mix the ingredients for the salsa in a bowl and serve to the omelette.
