Simple and Fast Chicken Thai Stew

Ingredients 4 servings

  • 600 g of chicken fillet
  • 1 broccoli head
  • 2 carrots
  • 1 red pepper
  • 1 can of coconut milk with green curry

For serving

  • rice noodles or rice
  • Cut chicken and vegetables into smaller pieces.
  • Fry carrots and peppers in oil until they get a little soft. Put aside.
  • Brown the chicken pieces in a little butter or oil. Add all the vegetables and beat over the coconut milk.
  • Simmer for about 5-10 minutes until the chicken is done.
  • Serve with freshly cooked rice noodles or rice.
