Boil a large saucepan with salted water. Pull a spoon into the water to form a swirl. Crack the eggs gently and allow to simmer for 3-4 minutes. Lift up with a hollow spoon and allow to drain.
Roast the bread slices and place on thinly sliced avocado, arugula and top with the egg. Sprinkle with flake salt or even zatar (see recipe below) and serve immediately.
Turn together toasted peeled sesame seeds, flake salt, chilli flakes, dried thyme, ground coriander, cumin and finely grated peel of lime.
