Vegetarian Lasagna Recipe

Vegetarian lasagna is a lightly cooked lasagna with spinach and ricotta cheese. Can be frozen in finished pieces to be included in the food box.

Ingredients for 6 food boxes:

  • 1 package of fresh lasagna plates (250 g)
  • 1 garlic clove
  • 1 leek
  • 1 tbsp olive oil
  • 1 pack of tomatoes, crushed (500 g)
  • 0.5 + 1 teaspoon salt
  • 250 g of leaf spinach, thawed and drained
  • 250 g of ricotta cheese
  • 2 pinch black pepper, freshly ground
  • 2 dl sour cream
  • 1 cup parmesan cheese, grated

How to prepare

  • Set oven to 200 °. Peel and slice the garlic. Stir and shred leeks. Fry garlic and leeks in oil about 2 min. Pour on tomato crusher and season with 1/2 teaspoon salt.
  • Mix spinach and ricotta. Season with 1 teaspoon salt. Turn tomato sauce with lasagna plates and spinach cheese mixture into a greased ovenproof mold.
  • Spread cream on top layer. Sprinkle with the parmesan.
  • Cook my oven for about 30 min. Let the lasagna cool, cut into portion pieces, pack and freeze. Serve with salad.
