Toasted Rye Bread with Avocado and Eggs Recipe

Ingredients

  • 2 eggs
  • 2 rye bread slices
  • 2 avocados
  • 20 g of arugula
  • sea salt
  • 2 tablespoons dry-roasted peeled sesame seeds
  • 2 tsp fling salt
  • 1 tsp chiliflakes
  • 1 teaspoon dried thyme
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 lime

How to prepare

  • Boil a large saucepan with salted water. Pull a spoon into the water to form a swirl. Crack the eggs gently and allow to simmer for 3-4 minutes. Lift up with a hollow spoon and allow to drain.
  • Roast the bread slices and place on thinly sliced avocado, arugula and top with the egg. Sprinkle with flake salt or even zatar (see recipe below) and serve immediately.
  • Turn together toasted peeled sesame seeds, flake salt, chilli flakes, dried thyme, ground coriander, cumin and finely grated peel of lime.
