Vegan Curry Stew with Lentils Recipe

Ingredients

  • 1 yellow onion, chopped
  • 3 garlic cloves, finely chopped
  • 2 carrots, finely chopped
  • 0.5 tbsp curry
  • 2 dl dried red lentils
  • 1 tbsp olive oil
  • 800 ml of coconut milk
  • 3 dl water
  • 1 pcs vegetable broth dice
  • 0.5 cauliflower heads
  • possibly 1 dl chopped parsley or coriander
  • salt and pepper

How to prepare

  • Mash the onion, garlic, carrots, curry and lentils in oil in a large saucepan. Add coconut milk, water and broth cubes. Let simmer under lid about 10 min.
  • Break the cauliflower into smaller bouquets and place in the pot. Let simmer for another 5 min.
  • Season with salt and pepper. Serve with parsley or coriander.
