Noodles With Chili Mushrooms and Eggs (Vegetarian Recipe)

Ingredients

  • 250 g rice noodles
  • 150 g of mushrooms
  • 2 tablespoons sesame seeds, roasted
  • 1 tbsp sambal oelek
  • 1 tablespoon liquid honey
  • 1 tablespoon rice vinegar
  • 150 g salad bowl
  • 3 green onions, thinly sliced
  • 4 boiled eggs, peeled, halved
  • 0.5 dl roasted onion
  • 1 red chili, thinly sliced
  • sesame seeds, roasted
  • Broth
  • 1 liter of water
  • 2 umami bullion cubes
  • 2 tablespoons Japanese soy
  • 0.5 tbsp fish sauce
  • 20 g of fresh ginger, thinly shredded
  • 2 star anise

How to prepare

  • Prepare the noodles according to the instructions on the package.
  • Boil all ingredients for the broth. Slice the mushrooms and mix with sesame seeds, sambal oelek, honey and rice vinegar. Shred the salad bowl and green onion.
  • Place the noodles in the bottom of 4 bowls and pour over the broth.
  • Distribute the mushroom mixture, salad bowl, green onion, eggs and chili on top.
  • Serve with roasted onions and sesame seeds.
