Salmon with Asian Noodle Salad

Ingredients 4-5 servings

  • 800 g salmon fillet of good quality
  • butter for frying
  • about 1 teaspoon sugar
  • 1 teaspoon salt
  • 200 g rice noodles
  • ½ sliced cucumber
  • ½-1 packet frozen mango, 250 g
  • 2-3 green onions
  • 1 red pepper fruit
  • 1 lime or lemon
  • ½-1 dl peanuts, roasted
  • Dressing
  • juice of 2 smaller paste
  • 1 tbsp fish sauce
  • 1 tbsp Japanese soy
  • 2 tablespoons sesame oil
  • 1 teaspoon ginger meal
  • 1 teaspoon chili spice mix
  • 1 teaspoon sesame seeds

How to prepare

  1. Rub the salmon with salt and sugar. Let stand for a while at room temperature.
  2. Prepare the noodles according to the instructions on the package. Pour from the water into a colander and rinse with cold water. Put back in the bowl.
  3. Stir in a little oil and some salt and stir.
  4. Cut the salmon piece, no further down than it holds together. Put it in a hot pan with butter and fry until it gets a little color. Then flip over and fry briefly on the other side so that it becomes a raw core.
  5. Mix noodles with mango, cucumber, sliced green onion and thinly sliced red pepper fruit without kernels.
  6. Save some for decoration. Put on a platter and serve immediately.
