Vegetarian lasagna is a lightly cooked lasagna with spinach and ricotta cheese. Can be frozen in finished pieces to be included in the food box.
Ingredients for 6 food boxes:
- 1 package of fresh lasagna plates (250 g)
- 1 garlic clove
- 1 leek
- 1 tbsp olive oil
- 1 pack of tomatoes, crushed (500 g)
- 0.5 + 1 teaspoon salt
- 250 g of leaf spinach, thawed and drained
- 250 g of ricotta cheese
- 2 pinch black pepper, freshly ground
- 2 dl sour cream
- 1 cup parmesan cheese, grated
How to prepare
- Set oven to 200 °. Peel and slice the garlic. Stir and shred leeks. Fry garlic and leeks in oil about 2 min. Pour on tomato crusher and season with 1/2 teaspoon salt.
- Mix spinach and ricotta. Season with 1 teaspoon salt. Turn tomato sauce with lasagna plates and spinach cheese mixture into a greased ovenproof mold.
- Spread cream on top layer. Sprinkle with the parmesan.
- Cook my oven for about 30 min. Let the lasagna cool, cut into portion pieces, pack and freeze. Serve with salad.
